Enchiladas Rioverdenses
A Rioverde favorite made with guajillo chile tortillas, potato and chorizo base, queso fresco, shredded cabbage, and a pickled jalapeno. A true abuela Anita staple. This is the dish that started it all.
Mole Potosino
A rich blend of chiles, spices, chocolate, served over tender chicken. Mole is usually eaten as a special occation but for abuela Anita, everyday is a special occasion.
Zacahuil
A giant tamal from the Huasteca region, slow-cooked and filled with seasoned pork. The Huasteca region is one of Mexicos hidden gems, full of indigenous culture, crystal blue waterfalls, and where my mom is from.
Asado de Boda
A traditional pork dish simmered in a smoky chile sauce that's often served during celebrations. My abuela was always booked and busy with this dish. She always had a wedding or a quince at least once a month that asked her to make this dish. It is typically made outside in a big pot called a cazo.
Cecina
Thinly sliced beef grilled to perfection and served with fresh tortillas. This beef is so flavorful all it needs is salt. One of my personal favorite dishes to eat for breakfast.
Aguamiel
A naturally sweet drink made from the maguey plant native in San Luis. It's an aquired taste. One of abuelas favorite drinks when going to Mexico.
